Use only your right hand to gently combine a small portion of rice with the curries, using your fingertips to make a unified, bite-sized ball, pressing it slightly together. Push the food into your mouth with your thumb. Take care so that no food passes your second knuckle, and keep it steady.

Your left hand is usually set aside for sanitary reasons and should never touch the food, shared plates, or the serving utensils. Washing your hands thoroughly before and after eating is a required cultural habit. In many traditional restaurants, there is a dedicated sink in the dining space for this purpose too.
